1 and 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/4 cup butter (softened)
3/4 cup orange juice
1 egg

Beat the egg with the orange juice and then add to the mix.
Add the cranberries, rind and nuts.
Bake golden on the outside and firm on the inside (test it with a knife, if it comes out clean, it is done). While warm drizzle 1 tblsp of orange juice mixed with 1 tsp sugar over top Great toasted up with butter or right out of the pan.
2 sticks of butter
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oats (I use Quaker old fashion)
1 cup dried cranberries (I use Craisins)
1 cup of white chocolate chips
Heat oven to 350
Beat together margarine and sugars until creamy
Add eggs and vanilla, beat well
Add combined flour, baking soda, cinnamon and salt, and mix well
Stir in oats, dried cranberries, white chocolate chips, and mix well
Drop by rounded tablespoonfuls onto ungreased cookie sheet
Bake 10-12 minutes or until golden brown
Cool 1 minute on cookie sheet , then remove to wire rack
Makes about 4 dozen if you don't eat the batter.
1 bag of cranberries - washed and cleaned (about 2 cups)
2 - 3 medium size apples (I like Macs, Granny Smith or Cortlands) peeled and cut into chunks
1 orange partially peeled and cut into chunks (leave some rind on)
Sugar (1/2 to 3/4 cup to taste)
Option - chopped walnuts or pecans
In a grinder or food processor, process the above so that the texture is coarse. Add sugar starting with 1/2 to 3/4 cup and continue adding to taste. Let the relish sit for a few hours before serving so that the flavors have a chance to mix.
Add nuts if you wish.
This is so good I eat it with a spoon and it hardly ever makes it to the table.
